For some of us, helping our children love veggies is something we have to work at. I’m always looking for ways to get my children to eat veggies without a fight, and this recipe that disguises vegetables will help!
Last week I shared with you another video featuring ways to Start Your Day Fresh and Healthy with tips from chef, Curtis Stone. Todays video features a recipe to make Southwest Chili Tacos that looks fabulous. And the best part? The veggies in the sauce are disguised so kids will eat ’em without even knowing it!

The recipe for Southwest Chili Tacos looks delicious and appropriate for the whole family and even guests if you are the entertaining type. If you like variations on tacos, and want your kids to eat veggies without them even knowing it, this recipe is for you!
Benefits of Veggies in the Chili:
- Chili’s, tomatoes and carrots are all considered nutritional powerhouses, so use them when you can!
- Beans are high in fiber and protein.
- Chili’s are a fruit and are high in potassium, folic acid and Vitamin A, C and E.
- Diced carrots blend into red sauces and add a subtle sweetness to the recipe that kids LOVE!
Ingredient list:
- crushed tomatoes, onion, carrots, celery
- olive oil, white wine vinegar
- ground beef, beef broth
- kidney beans
- cayenne pepper, cumin
