Creamy Sweet Pea Salad Recipe

A hit with the whole family, this simple sweet pea salad recipe works wonderfully for family meals and potlucks. Even folks who are not huge pea fans like this creamy side dish, which doesn’t linger long after it is served.

Layer it for a rainbow effect, or simply toss the first five ingredients together for a 5-minute weeknight side dish.

You Will Need...

  • 2 cups frozen or fresh petite peas
  • 2 tablespoons mayonnaise
  • 1/4 cup carrot, grated
  • 2 radishes, sliced or grated, optional
  • 1/2 of an English cucumber, sliced and quartered, optional
  • 1/2 of a yellow sweet bell pepper, diced, optional
  • 2 tablespoons sunflower seeds, optional
  • 2 green onions, finely chopped, optional
  • 2 teaspoons lemon juice, divided
  • sea salt, to taste
  • clear glass serving bowl, optional

  • Step 1

    Blanch peas, drain, and mix with mayonnaise, lemon juice, and salt.
  • Step 2

    Separately toss cucumbers with lemon juice and salt. Layer on the bottom of the serving dish.
  • Step 3

    Add remaining ingredients in even layers.
