Chocolate Covered Fortune Cookies
You Will Need...
- 1 egg white
- 1/8 teaspoon vanilla extract
- 1 pinch salt
- 1/4 cup unbleached all-purpose flower
- 1/4 cup white sugar
- preheat oven to 400 degrees.
- gloves
- muffin tin
- mug
- icing bag/zip lock bag
Step by Step Instructions
Step 1
Write fortunes on strips of paper about 4 inches long and a half an inch wide. The cool thing about these is you can put custom fortunes, write sweet messages to loved ones, or for an added twist, you can make these fortune cookies as a way to give love coupons to your significant other!
Step 2
Sift the flour, salt, and sugar in a bowl sperate from the other ingredients. Once this is done, combine all the ingredients listed until it comes to a frothy mixture- foamy but not stiff.
Step 3
Place teaspoons of the batter onto a greased cookie sheet. You want them a few inches apart so they have room to spread. With the back of your teaspoon, work the batter into a circle about 3 inches in diameter. You want them to be very thin so they will be easier to bend. Don’t be afraid if you think you may even see some of the pan through the batter.
Step 4
Bake for about 5 minutes. I’ve baked them for up to ten minutes before depending on the batter. You will know they are ready becuase you will see a golden brown color around the edge of the cookie and the middle will stay pale.
Step 5
This step is FAST! You will need nimble fingers. Put on your gloves. Take the cookies out (should only have about 2 cookies per sheet to start with I might add). You now have at most 30 seconds beore the cookies will cool and be too hard to fold.
Fold the cookie in half. Then, take your mug and bend the folded cookie over the rim of the mug. Place folded cookie in muffin tin to hold shape and let cool.
Do the same with the second cookie.
Step 6
While the cookies cool, prepare the chocolate. You can either tempur the chocolate (look up how to do this anywhere online) or buy baking chips/wafers. These do not need to be tempured and will harden just fine.
You’ll need your microwave to tempur and once you’ve done this, dip your cooled cookies into the chocolate. You may add sprinkles and such to decorate further.
****if you would like colored cookies, add some food coloring to the batter!****
****also, to get the striped look, use icing bottles, icing bags, or make your own with a zip lock bag and cutting a small hole at the corner***
