I love a crispy crunchy potato? But how do you get that without oil? Well, with the help of a waffle iron you can have a crispy potato that is still healthy! It is really easy to wow your friends (and kids) with these waffle iron potatoes. There is a video of how easy these are to make on the blog post too!

You Will Need...
- small potatoes (I used yellow dutch baby potatoes)
- oven or microwave
- waffle iron
Step by Step Instructions
Step 1
Pre-cook the potatoes in a microwave. I microwave the baby potatoes for 3 minutes. You can also bake them in a conventional oven.
Step 2
Heat the waffle iron while the potatoes cook
Step 3
Once the potatoes are “pinchable” place 2 potatoes (diagonally from one another) in the waffle iron and close the waffle iron.
NOTE: I have a flip waffle iron, and when I forced the lid closed and flipped it, I tweaked my iron a bit. You do NOT need to flip the waffle iron or force the iron to close (to protect your waffle iron)Step 4
Remove from the waffle iron (be careful – they are hot) and served with your choice of toppings or alone!
