I came across these cute little key limes the other day and I couldn’t resist buying them. They were a tad on the expensive side in comparison to a regular lime, but I figure I would splurge and see what would come of it! This week I have had a great time in the kitchen finding all the different ways that I can incorporate these little green pucker your lips cuties. My blonde sweet girl has been eating them straight up!

I was on a mission to use these key limes to make a creamy, thick, no bake key lime pie with vanilla wafers as the buttery,sweet crust! Whew, it is quite a lot of work to juice these little limes. I definitely earned my dessert tonight and it was well worth it!

You Will Need...
- Ingredients
- For The Crust:
- 30 vanilla wafers
- 3 Tablespoons butter
- For The Filling:
- 24 key limes
- 8 ounces cream cheese room temperature-I use 1/3 less fat
- 8 ounces heavy cream
- 1/3 cup + 3 Tablespoons granulated sugar, divided

Place vanilla wafers in a ziploc bag, get out all your stress of the day and crush those cookies.
In a bowl melt butter, and stir in crushed cookies
In a 9 inch pie plate place crushed cookies and press down to form crust, place in fridge while you mix together everything else
In a large bowl place heavy cream and 3 Tablespoons sugar, beat together until it becomes thick whipped cream, set aside
In another bowl mix together cream cheese and 1/3 cup sugar, set aside
Get ready, roll your sleeves up and juice the 24 key limes, you should get about 1/2 cup juice
Mix juice in with cream cheese
Fold into whipped cream
Take pie crust out of fridge and spread key lime cream cheese mixture all around.
Place in fridge for at least an hour.

**Can’t find key limes?? No worries, regular limes work great, but you’ll need about 3/4 of a cup of lime juice to get the same intense flavor. Want just a hint of lime flavor, just add less juice until you arrive at your desired taste**
