Sound too good to be true? It’s not. I’m going to show you how to cook the easiest pulled pork recipe in the shortest amount of time possible. Oh yeah… and your teenagers and little ones will gobble it up! What if I told you this pulled pork recipe was all under $25 and that my family of seven enjoyed leftovers the next day? Now that I have your attention, let’s get started!!!
Pulled pork is usually made from a shoulder cut of pork and is traditionally slow cooked. You can find pulled pork in cuisines all around the world, which tells me that everyone knows it’s delicious! {snicker}
Instant Pot Pulled Pork
Have you jumped on the Instant Pot bandwagon yet? If not, you should consider it. I was chatting with my girlfriends the other day and they were asking me about my Instant Pot wondering what all the hype was about. If you are on the fence or just wondering what the heck an Instant Pot is, let me tell you what I told them…(their questions are bulleted)
An Instant Pot is like a Slower Cooker mixed with a Pressure Cooker on steroids. It’s also a rice cooker, a vegetable steamer, a yogurt maker, a saute pan, and a warming pot. So, it’s a single appliance that’ll do the job of seven different appliances WHILE saving you tons of time. You can make hard boiled eggs in 5 minutes, Baked Potato Soup in 10 Minutes, Sweet Potatoes in 10 Minutes, and even dessert like Instant Pot Key Lime Cheesecake!
So,
- Why the heck would I get another cooking gadget? {because it does the work of like 7 different appliances!}
- Why is it different from the crock pot? {it cooks FASTER than a crock pot}
Instant Pot Pulled Pork Recipe
If you’re still not convinced how easy this Instant Pot pulled pork recipe is, take a look at the ingredients. If you’re missing an ingredient add your favorite one. The great thing about this recipe is that you won’t mess it up.
Ingredients Needed:
- 2 pork roasts
- 1 can diced tomatoes
- 1 cup salsa
- 1/2 cup brown sugar
- 1/2 cup onion, chopped
- spices (brown sugar, chili powder, paprika, cumin, salt, pepper)
Step 1: Rub Pork with Spices
Mix spices together in small bowl and rub on pork roasts. Set aside.
Spice rub:
1Tbsp. brown sugar
1Tbsp. chili powder
1 Tbsp. smoked paprika
1 tsp. cumin
1 tsp. salt
1/2 tsp. pepper
Step 2: Combine pork base
Combine tomatoes, salsa, brown sugar, and onion. No need to dirty another dish. You can mix these together in the Instant Pot. {score}!
Step 3: Add the Roasts to the Instant Pot
Place the roasts on top of the tomato mixture.
Step 4: Cook
Close and lock the Instant Pot lid. Press manual. Then set the timer using the plus sign. Set to 50 minutes, listen for those 3 beeps to let you know you’ve programmed it correctly, and then walk away. NOTE: the Instant Pot will need to cool and depressurize after the cooking time. Allow a few minutes for this. Carefully remove lid.
You’ll know the pork is done when it shreds easily. Test the pork with a fork. If it’s tough, then you’ll want to cook it more. Close the lid and set the timer for about 10 minutes more.
Step 5: Shred Pulled Pork
Remove pork roasts from the Instant Pot and shred the pork in a separate bowl, using two forks. Place the shredded pork back into the Instant Pot. Mix with tomato mixture.
Divide the pulled pork. Use half of the pork for pulled pork sliders. Use the other half for pulled pork tacos.
The pork sliders were kicked up a notch with a delicious and simple coleslaw!
Coleslaw Recipe:
- 4-6 cups shredded green and purple cabbage
- 1 Tbsp. sugar
- 3 Tbsp. mayonnaise
- 2 Tbsp. apple cider
- celery seeds
- salt
