Today we’re focusing on squash recipes as we’re learning how to garden and will need to have some savory butternut squash recipes as well as some spaghetti squash recipes up our sleeve!
I am finding through my contributions here on Tip Junkie that food is glorious and food can be a masterpiece that entices even the pickiest eaters.
When I took on squash, I thought I would find myself short on flavorful and interesting dishes because squash to me always meant a boring side-dish. Once again, I was proven wrong in my food assumptions. Through my squash research I have come to realize just how very uneducated I was, not only in the knowledge of the many types of squash that are available – butternut, spaghetti, acorn, hubbard, turban (and the list goes on), but also the many, many ways it can be prepared.
With so much variety, I decided to focus my attention on two types of squash (that are found easily in any supermarket), for this round-up. Additionally, instead of focusing on this vegetable as a side-dish, I chose to find you some wonderful main dish recipes to help you, as well as me, think out side of the squash box a bit. Who knew that squash could be a flavorful ingredient to a whole list of main dishes like scrumptious ravioli, casseroles and even tacos?!
