Easy Red Velvet Brownie/Cake Cups with Peanut Butter and Chocolate Chips Topping

Instead of the usual square sized brownies I decided to make mini brownie cups and I added red gel food coloring. You can adjust the amount according to how much darker you want the color. The brownie mix calls for 3/4 cups oil which I replaced with 1 stick unsalted butter, 1/4 cup water which I replaced with 1 /4 cup milk. I’m not sure what kind of milk to use and I only have evaporated milk at home or can I use fresh milk? {blink blink}.

So these mini brownies were baked using my Bakery Bites Express in just 7 minutes. If you have an oven then bake according to box instructions.

  • Step 1

    Prepare brownie mix according to package (but I replaced water with milk and oil with butter)

    Beat the butter till creamy, add brownie mix, egg and milk and mix till no lumps. Add red food coloring and mix again softly.

    Top filling:
    In a bowl add the peanut butter and cream cheese and microwave for 36 seconds.

    One brownie is still hot, the top should sunk if not press lightly using back of spoon and add your peanut butter topping then some chocolate chips.
