Making your own delicious tomato soup has never been easier than this, it’s also super tasty and healthy too! 🙂
I’ve topped mine with pumpkin seeds and coriander, but feel free to experiment with any nuts or seeds that you prefer.
This recipe also calls for vegetable broth and I have a great easy recipe for this too which is so simple to make and a great way of using up vegetables. It also tastes so much better than shop bought ones.
Heat the coconut oil in a pan then fry the onion and garlic until softened (approx 1 minute).
Add turmeric, mixed herbs and chopped tomatoes, and cook for another 2-3 minutes (until the tomatoes softened) then add in the can of chopped tomatoes, broth (you can get the recipe to make your own here) apple cider vinegar and basil. Bring to the boil then turn the heat down and leave to simmer for 5 minutes then leave to cool.
Add the soup to a blender and blend until thick and creamy.
