The good thing about cake pops is that we can use any cake left over that we have. If not, you can bake your favorite cake and use it for these cake pops. Crumble the cake and mix it with buttercream. Maybe its about 60% cake and 40% buttercream. Add the buttercream and when you can make a ball and the ball holds the shape wanted, then you have the right consistency. Be carefull not to put too much buttercream!!
Now that we have ready the mix is when we should prepare the rose petals. You can use fondant or modeling chocolate, its up to you. I used red fondant but you can make them in any color.
To cut the petals you can use different cutters (rounds, ovals, petal shapes, etc) you can always shape them, but always in two different sizes, unless you want an extra big rose then you would need to have a third size. I do like the heart shaped cutters, its easy to work with and very natural.
The first thing is to make a ball with the mixture and give it a cone shape. If the mixture is cold it´s going to be easier to work with.
For these roses I used red wilton candy melt. The candy melt needs to be as liquid as possible. You can add a little bit of vegetable oil and mix it again to make it smoother.
Now that we have the cake cones and the melted red candy melt we dip the tip of the lollipop stick in the candy melt and introduce it into the cake cone half way and let it cool. You can even put it in the refrigerator for a while. After that you can dip the cake cone into the candy melt until is totally covered. At this point and before it cools down, you can start to add the petals. It doesn´t matter if the chocolate coat is not perfect because it will be covered with the petals.
e start putting the small size petal at the tip of the cone making the center of the flower. We add other petals wrapping around the cake pop giving them a wavy effect pressing with your fingers to make it more natural. When we have the center, we can then add the big petals covering the whole cake pop. Try to secure the end of the petal to the lollipop stick. You will see that it’s easier than it seems!!!
