It’s National Fritters Day and to celebrate I’ve made these super healthy and delicious sweet potato and courgette/zucchini fritters. They’re so easy to make and taste fantastic.

They make the perfect healthy starter, but could also be served with salad to make a tasty light lunch.

Whatever way you choose to serve them, you won’t be disappointed 🙂
