Butternut Squash Au Gratin

If you have an abundance of summer squash (or even if you don’t), this recipe for Butternut Squash Au Gratin is a winner. It’s easy to make, tastes delicious and best of all, kids and adults alike enjoy it!

You Will Need...

  • 2 butternut squash OR 1 butternut and 1 acorn squash
  • olive or vegetable oil
  • onion, chopped
  • tbls flour
  • milk
  • salt & pepper
  • panko bread crumbs
  • butter, divided
  • parmessan cheese, freshly grated
  • Optional: fresh basil, chopped
Estimated Time:
  • Step 1

    Cut squash in half lengthwise, remove seeds and slice. Chop onion.
  • Step 2

    Over medium heat, heat 1 tbls of olive oil, add squash, onion and garlic. Saute until squash is tender. Lightly season with salt and pepper.
