Choosing what to have for dinner can be harder than one may think. It’s easy to get in a rut and cook the same old stand by’s. Here’s a few recipes that I compiled with Mother’s Day in mind. They are relatively easy to make, don’t require a ton of clean up, and they look good. If the photos and recipes are any indication, then they taste great, too. I double-dog dare all the kids {that are old enough to cook of course} and men out there to cook the mothers in their lives something special this Mother’s Day. 1. Balsamic Pork Tenderloins ~ Combine garlic, rosemary and balsamic and you get this easy oven roasted tenderloin.
2. Grilled Salmon with Lime Butter Sauce ~ The juice and zest of a lime plus a little bit of garlic equals a tasty but oh-so-simple salmon recipe that meets the need for a great meal.
3. Prosciutto Wrapped Halibut on Asparagus Sauce ~ Meal time will be smooth sailing when you put this fish-dish on the table! You cant go wrong with the delicate flavor of halibut accompanied by the savory and salty tones of the prosciutto. As if this combination didnt already have you on board, it is accented with a bed of pallet cleansing, gentle asparagus sauce. Yum!
4. Crock Pot Chickpea Stew with Balsamic Caramelized Onions ~ This recipe is packed with healthy, flavorful ingredients and is accented with a Mediterranean flare. Yummy! {vegetarian}
5. Chicken Oscar ~ Chicken Oscar is an easy dish that will satisfy your hungry family year round. This delicious recipe is sure to make it into the family favorites category, too.
6. Apple-Pear Salad With Lemon-Poppy Seed Dressing ~ This salad has the perfect blend of fruit with the apples, pears, and dried cranberries. The salty cashews also balance out the sweetness. Plus it doesn’t require cooking meat! {vegetarian}

7. Citrus and Rosemary Roast Chicken ~ This Citrus and Rosemary Roast Chicken is so moist and flavorful. Enjoy it with some potatoes and Maple and Bacon Brussels Sprouts.
8. Lamb Burgers with Garlic, Shallots and Feta on a Homemade Rosemary Focaccia Bread ~ Mix ground lamb with garlic, shallots and feta to create this flavorful spin on the burger. Add the homemade rosemary focaccia included with this recipe post and you have a very satisfying meal.
9. Chili chicken tomato soup with tortillas ~ This chipotle tomato soup from Meals in Heels cookbook with shreds of chicken, crispy tortilla strips, avocado and fresh lime looks really delicious.
10. Asian Lettuce Cups with Ground Turkey & Green Apples ~ Asian Lettuce Wraps or Asian Lettuce Cups are always fun and delicious. This recipe has been updated to be lighter, more refreshing and healthier. No goopy cornstarchy sauce!
11. Broiled Salmon with Spinach and Feta Sauce ~ This lovely dinner only takes 10 minutes to prepare! Enough said.
12. Angel hair with Spicy Shrimp ~ Here’s another recipe that looks amazing but only takes a few minutes to prepare. It has the wow factor without the labor factor. {wink!}
