The Yummiest Pesto Recipe {Potluck}

Going to group socials or a church potluck dinner is always a good time.  However, I’m always agonizing on what to make.  Recently, my fabulous friend Gillian sent me her yummiest pesto recipe – Pesto Chicken Pasta and it’s divine and perfect for a potluck dinner party!

So I hopped into my Chevy Malibu and went to the grocery store to buy all the ingredients for this fantastic pesto recipe.

Pesto Recipe – Pesto Chicken Pasta

• 4-5 boneless chicken breasts – grilled and sliced or diced  (or you can use frozen grilled chicken)
• 1 lb. (or as many as you want) mushrooms – washed and sliced – then sauteed in 1-2 T. olive oil.
  Salt and pepper to taste.
• 1 jar sun-dried tomatoes – diced into small pieces – then sauteed in a little olive oil.
• 1 or 2 packages bowtie (farfalle) pasta (or whatever pasta you want)  Cook according to pkg. directions.
• 1 can artichoke hearts – drained and roughly chopped.
• 1 large jar Pesto (16 oz.)
• 10 oz. goat cheese . Add it spoonful by spoonful to the hot mixture – it will melt a little as you stir it.
• Grated Parmesan cheese to taste. (Not powdered)

Potluck Pesto Recipe Instructions

I cook and slice the chicken first; then saute the mushrooms and sun-dried tomatoes.  Then I boil the pasta, drain it and mix together in a large bowl the hot pasta, chicken, mushrooms, sun-dried tomatoes, chopped artichoke hearts and pesto.  Last I add the goat cheese and salt and pepper to taste.  Top with grated Parmesan cheese.  Serve it hot with bread and Greek salad.  Great as leftovers.
